Hungarian Pancakes (Palacsinta) with Fresh Raspberries
Hungarian Palacsinta is a traditional Hungarian pancake known for its thin, soft texture and delicate golden color. Similar to French crêpes, these delicious pancakes can be filled with fresh fruit, jam, sweetened cottage cheese, or chocolate spread. This version features fresh raspberries and a creamy filling, making it a delightful breakfast, dessert, or afternoon treat.
Ingredients
For the pancakes
- 250 g all-purpose flour
- 2 large eggs
- 300 ml milk
- 200 ml sparkling water
- 1 tablespoon sugar
- 1 teaspoon vanilla extract
- A pinch of salt
- 2 tablespoons vegetable oil, plus extra for the pan
For the filling
- 200 g fresh raspberries
- 200 g sweetened whipped cream or vanilla cream cheese
- 1–2 tablespoons powdered sugar
- 1 teaspoon lemon zest (optional)
For serving
- Powdered sugar
- Extra fresh raspberries
Instructions
1. Prepare the batter
In a large mixing bowl, whisk together the eggs, milk, sugar, vanilla extract, and salt. Gradually add the flour, whisking until the batter is smooth and free of lumps.
Add the sparkling water and vegetable oil, then mix well. The batter should be thin and pourable, similar to traditional crêpe batter.
2. Let the batter rest
Allow the batter to rest for 15–20 minutes. This helps the flour absorb the liquid and produces softer, more delicate pancakes.
3. Cook the pancakes
Heat a lightly oiled nonstick frying pan over medium heat. Pour in a small ladleful of batter, swirling the pan to create a thin, even layer.
Cook for about 1–2 minutes, until the edges begin to lift and the underside turns lightly golden. Flip and cook for another 30–60 seconds.
Repeat with the remaining batter, stacking the cooked pancakes on a plate.
4. Prepare the filling
In a bowl, combine the whipped cream or vanilla cream cheese with powdered sugar and optional lemon zest. Stir gently until smooth.
Wash the raspberries carefully and pat them dry.
5. Fill and roll
Spread a thin layer of cream over each pancake. Arrange several raspberries near one edge, then fold the sides inward slightly and roll the pancake into a neat cylinder.
Repeat with the remaining pancakes and filling.
6. Serve
Arrange the filled pancakes on a serving plate. Dust lightly with powdered sugar and garnish with fresh raspberries.
Serve immediately for the best texture and flavor.
Tips for Perfect Hungarian Palacsinta
- Keep the batter thin: This is the secret to soft, flexible pancakes.
- Use sparkling water: It helps create a light texture, although ordinary water also works.
- Avoid overheating the pan: Medium heat allows the pancakes to cook evenly without becoming too crisp.
- Choose your favorite filling: Traditional Hungarian options include apricot jam, sweetened túró (Hungarian cottage cheese), walnuts, and chocolate.
- Make them ahead: Cook the pancakes in advance, refrigerate them, and fill them shortly before serving.
